Shepherds Pie (6-9 months)
Ingredients
2 tomatoes
¼ onion
225g/8 oz potato
50g/2 oz button mushrooms
115g/4 oz lean minced beef
25ml/8 fl oz/1 cup water
15ml/1 tbsp tomato ketchup
Pinch of dried mixed herbs
Method
1 Make a cross cut in each tomato and put them in a small bowl covering them with boiling water. Leave to stand for 1 minute then drain and peel off skins. Cut into quarters and scoop out seeds.
2 Chop the onions finely and chop potato and slice the mushrooms.
3 Dry-fry the beef in a saucepan for 5 minutes till completely browned.
4 Add tomatoes, potato, mushrooms and onions cooking for a further 3 minutes, stirring well to blend flavours together.
5 Add water, ketchup and herbs, bringing to boil then reduce heat, cover and simmer for 40 minutes until meat and vegetables are tender.
6 Process or mash the meat and vegetables just enough to give desired consistency
